OUR TEAM

ELIZABETH

JACQUELYN

Or peanut butter and jelly. Maybe more like tequila and lime - with a rim of Tajín on a hot summer day. Refreshing, yet spicy. We grew up with a Greek mother and an Irish father. There are four siblings total, and the structure of our family roots are deeply reflected in our approach to nutrition and coaching. The wisdom of our Greek mother led us both to pursue Master’s degree in clinical nutrition, and appreciate the balance of food and lifestyle.

The attitude (and athleticism) of our Irish father raised us to make sure to have fun, and not take anything too seriously, while staying engaged in physical activity. The chaos of our siblings taught us how to manage stress and relationships effectively (ha).

All this to say, we approach everything with balance, and we work together to deliver the best possible experience for whatever your goals are.

We go together like peas and carrots

Our Bios

Elizabeth McHugh MS, MPH, CNS, NBC-HWC | Co-Founder

Elizabeth is the youngest of four children. She has an expertise in letting Jacquelyn manage her life, and if Jacquelyn isn’t available, she finds another sibling to fill in. You can find her with her husband usually on Jacquelyn’s back porch, or traveling to their next destination. She has a beautiful baby girl, and a German Shepherd, Frankie. Elizabeth loves being surrounded by books, and her prized possession is her blue velvet couch. She loves a strong cup of coffee and a great margarita (in fact, that's how she met + married her husband!) She plays recreational volleyball and coaches her nephews’ flag football team with Jacquelyn. Elizabeth strives for balance through all parts of her life, and has been successful in achieving it. She believes that understanding behavior and how to support behavior change is crucial in nutrition and lifestyle balance.

Elizabeth first became interested in the connection between mind and body when she was introduced to yoga at age 15. She pursued a degree in Psychology at Florida State University. While finishing her degree, Elizabeth decided there was more to supporting behavior change then traditional psychology and counseling. Her mother encouraged her to look in health and wellness coaching. Elizabeth went on to complete two Wellcoaches Health and Wellness Coaching programs, as well as Functional Medicine Coaching Academy. She is a Nationally Board Certified Health and Wellness Coach. Elizabeth also holds a Master of Public Health from George Washington University, and a Master of Science in Nutrition and Integrative Health. She has over 1000 clinical hours, is a Certified Nutrition Specialist, and a Licensed Dietician Nutritionist. She is currently pursuing her Doctorate in Clinical Nutrition. She has worked in multiple startups and with multiple practitioners in supporting clients and patients in creating sustainable behavior change.

Jacquelyn McHugh MS, CHWC | Co-Founder

Jacquelyn is the oldest of four. She has an expertise in organization and managing Elizabeth’s life for her (but seriously!). She has two beautiful boys, and you can find her with her husband on their back porch, at the baseball and football field, or in Charleston or downtown Columbia distributing her magazines, Edible Charleston + Edible Columbia. She loves a fabulous glass of bubbles, and absolutely can not help but dance if Gloria Estefan’s “Conga” is playing. She cooks healthy meals (in under an hour!) for both she and Elizabeth’s family, four (to seven) times a week, and has mastered the art of getting baseball clay out of her son’s white pants. Jacquelyn continues practicing her love of sports through coaching her sons’ flag football team and playing recreational volleyball. She has completed multiple Tough Mudder races, Spartan Races, 10k’s, a 15k, and half marathon. She is NOT a runner. Jacquelyn believes you can not out-train poor nutrition, but you can eat your way into a competitive advantage.

She started her career as a certified athletic trainer (ATC) after receiving a Bachelor’s degree in Sports Medicine from Florida State University. After working with athletes for a few years, Jacquelyn recognized the connection between nutrition and optimal athletic performance. She decided to pursue a degree in Nutrition + Dietetics from Florida International University. At the same time, she earned her certification in WellCoaches Health and Wellness Coaching in order to best support her clients changing their behavior. In 2017, she began publishing Edible Columbia + Edible Charleston in order to support local food and educate the community on the importance of eating local food. She finished her Masters of Science in Nutrition and Integrative Health in August of 2022.
